Hello! We're Texas Milling!

Thank you for visiting our page and your interest in our products! Here at Texas Milling our vision started with a young boy who grew up in a small town in Texas called Gustine that has a population of about 400 people. This boy was raised on a family farm that included a small dairy, a beef cow operation, and row crop farming. Growing up on a farm we grew our own garden and stored our vegetables as was passed down by the generations before us. Our beef, pork, and chicken were also farm raised. The milk we drank, made ice cream out of, and made our own butter and cheese from, came from our own dairy. We only bought what we did not raise on the farm from the store in town. I did not know any different than to eat farm fresh food. Once I got into high school, started hanging out with friends eating burgers and fries from the local store, or maybe taking my girlfriend out to eat on a date, I discovered that my family's food and the food in town was different. Nearly every time I would invite a friend or my girlfriend over to eat with my family, they would go on and on about how good the food tasted.

One day, a doctor, a single father from the Dallas-Ft Worth Metroplex area, bought a ranch across the road from our family farm. As to the neighborly fashion of country people, we walked over, introduced ourselves, and invited him and his sons to supper. As they ate, what to us was a normal meal, they could not keep from raving about how good it was. This went on for a couple of months. The doctor said how the food tasted so much better and was so much healthier than the food from the traditional grocery stores in the city. We ended up getting two more neighbors from the Dallas-Ft Worth Metro area and they said the same about the food and how they wished they could get it in the city. The dream about how to bring farm fresh, healthy, and fair priced food to people in more urban areas started.

As times got harder in conventional farming and profits shrunk to where what I grew up doing and the life I loved just could not support all the family, and my young family that I started, I found myself driving a truck. After a few years of driving a truck, I just wanted to go back to farming but the problem was still there. Input costs were too high, land was too expensive for a young person to buy, and farming was still not very profitable. I went to work at a local feed mill to make sure my family was taken care of. During this time, we were eating the average processed foods from the big box stores because it was cheap. When my son was six years old, he developed serious diabetes and has been insulin dependent ever since. I started to wonder if this was because of our new diet. This brought me back to the idea of farm fresh food for people in our town or the cities. After twelve years of working at the feed mill, I was laid off. Now, my dream takes a new direction.

 

The only way I could see to make my dream come true was to work in the West Texas oilfields and make enough money to finance my dream. While working in the oilfield, I started researching what products I could offer people who wanted something wholesome and real. I had many ideas but finally settled on what I was good at and what I knew. I knew how to grow grain, but what to do with it was the issue. A friend of mine one day told me that he and his family had to eat a gluten free diet. So, I did my research and found that grain sorghum was naturally gluten free and I could grow it in my area.

For the last ten years, I have been trying different brands and kinds of grain sorghum to see what worked the best. Then, I started testing grinders and doing research to see which one made the healthiest flour. I tried many different brands and types and finally settled on a stone mill. I liked the stone mill due to it having a lower grinding temperature that helps to keep more of the natural nutrients in the flour, with no risk of metal ending up in the finished product.

Then came packaging the product. How do I do it and get it right? I found that placing freshly ground flour in a paper bag, then putting it in a vacuum sealed bag, keeps it fresh for much longer without chemical additives.

Next came the process of getting the flour tested for FDA approval. I sent a sample to be tested and, yes, it tested less than five parts per million of gluten. The industry standard is less than twenty parts per million so, I've done it right. The FDA test also concluded that there are no chemicals or fillers in the final product that you receive and, viola, we did it.

Don't just take my word for it, we use this product in our own home for breading steak, baking cakes and cookies, and breading chicken for baking. We here at Texas Milling have a sound mindset that if our product is not good enough for our family, it's not good enough for yours. This is why we use it and try new recipes so we can share them with you, our valued customers.

We will be posting pictures and videos of us growing the crops, from tilling the land, to planting the seeds, to taking care of the plants, up through the harvest so you can see how our product is grown and cared for on a local level. We will also be posting other locally produced products from local farms and farmer's markets in our area.

From the dream of a young boy, to him making it a reality, has been a long hard road. We are just getting started and hope you follow us and ride along with us on this magnificent journey. Most importantly, I hope you enjoy using our product as much as we enjoy bringing it to you.
